Here’s something kind of fun for you!!  This weekend I was talking with a friend of mine and I realized that I hadn’t posted any of our camping recipes yet!!  I thought I’d post a quick one for you today.  Keep in mind that while camping there are times you have to think on the fly… not always prepared with the right sauces or spices we just have to make do… and we sure do!  My sisters and I started to brainstorm and came up with this idea during our second week of our summer camping trip.  The kids were hungry and dinner wasn’t even in the making yet… we started going through our list… there’s cheese sticks (NO!), there’s chips (NO), have an apple (NO)… what about some carrots (NO!)… I’m sure you see where this is going!

So we were searching through our ice chests and our food tent… yes, we have a little tent for our food… don’t laugh until you’ve tried it!!! 🙂  This is what we came up with….

Take a roll of ready made dough… pizza dough would have been perfect, however we were stuck with crescent dough… it worked!

Add Papa’s pepperoni‘s that he was saving for a snack later…

Cut cheese stick in half and place onto pepperoni… It would have been really great if we’d had some kind of sauce here…. we didn’t.

We’ll have to plan for these next year!

Cut the dough into sections around your treats.

Roll and place on parchment paper or foil and pop into the oven for about 10 minutes.  Oh… did I mention that we also have a camping oven???

Yep… It’s pretty cool.  We make orange rolls for breakfast and cookies for snacks (when we aren’t in the mood for s’mores!).  Anyway… back to our newest treat…

They come out of the oven all toasty and brown with melty cheese on the inside…

Now doesn’t that just look yummy… for a snack?  I know, it needs a bit of sauce 😦

Here is where I would normally show you a picture of the kids eating and loving the treats we made…. but by the time they were all cooled off and passed out and I scrambled around my tent looking for the camera (I had just put in there)… they had all been eaten!!!  Of course they wanted more… but we didn’t have anymore dough, so we tell them to wait for next year… we’ve promised to add these to our ‘food’ list!  You’ll have lots of Happy Campers when you make these!!

Yes, yes, I know I it’s Monday, and I promised you this over the weekend. (Picture me here, hanging my head in shame.) I am not yet in the groove with this whole homework thing! I did however manage to get that done on time, but I’m sad to say it was at your expense! So here’s a little sugar rush that’s super simple. Dare I offer it as a “study-aid?” LOL You decide. But I’ll bet if you try it, you’ll get an A Plus!

 

 

 

 

Ingredients

  • One can Cinnamon Rolls
  • Vanilla Ice Cream
  • Praline Liqueur
  • Sweet tooth
Directions
Now don’t blink, you might miss somthing!
1. Put the rolls in the pan
2. Then bake ’em up!
  
3. Put the icing in a bowl.
4. Add a little (or a lot…hic! Excuse ME!) Praline Liqueur (check out your local BevMo for this) and stir it in.
   
5. Drizzle it all over the baked rolls.
6. Use it all up, so they are fully covered in Praline-y goodness!
7. Now most people would stop here and call it dessert….but then you’d be missing out! So plop a scoop of vanilla ice cream in a couple of bowls. (You really should share this with a few folks, but hey, who am I to judge?)
8.  Top with a warm, gooey, roll and enjoy!

Hey Fat Bottomed Friends! Just wanted to let you know we haven’t forgotten about our favorite people. (I mean, you….Yes…YOU!) It’s been a crazy whirlwind the past week or so. Fat Bottomed Tee got a job (I’ll let her tell you about that!) and I….big gulp…went back to college!!! If you’ve been following us on Facebook you might have read a little about that. Today I thought I would share a recipe with you that I found in ad for stewed tomatos over 20 years ago!   It became a family favorite the first time I made it.  I’ve shared this dish with my sisters and they’ve made their own changes to the recipe (as I have) – so feel free to adjust according to the tastes of your own family!   Of course you’ll still love it even if you don’t change a thing!!  Honestly… how can you go wrong when you’ve got corn chips and chicken???

Here is what you’ll need to get started…

Ingredients:

  • 6 Chicken Breasts (boneless/skinless work best)
  • 4 tbs corn oil
  • 4 tbs lime
  • 2 tsp honey
  • 3 cups or 1 lg bag White corn chips (finely crushed)
  • 3 cans Mexican stewed tomatoes
  • 2 garlic cloves
  • 1 bunch of cilantro
  • 1 cup Monterey Jack Cheese (shredded)
  • fresh lime wedges

Preheat oven to 350°

In a shallow dish mix together oil, lime and honey.  Set aside and grab the chips!

Crush the corn chips in a blender to almost a powder consistency (use the entire bag) you’ll want about 3 cups. Pour into a flat type dish. (this is your breading mixture).

Don’t bother to rinse the blender out. Why clean something if you don’t have to!!!  After crushing all the chips, pour all 3 cans of Mexican stewed tomatoes into your blender and add cilantro to taste (I use about 3/4 of the bunch).  Also add garlic. Leave in the blender for the time being.

Dredge chicken breasts through your mixture of oil, lime and honey – then roll in crushed tortilla chips.

Place in baking dish and then place into oven until chicken is done, about 30-35 minutes.While your chicken is in the oven

 

we need to puree the stewed tomato & cilantro mixture into a sauce.  When chicken is done – remove from oven, squeeze lime onto chicken then top with sauce .  You might want to make extra sauce for serving, you can decide that when you see how much it makes.  Don’t worry, you won’t have too much – it can be used for lot’s of things!!

Top sauce with cheese and return to oven for about 5 – 10 minutes.

When cheese is all nice and melty… it’s done!!

Now doesn’t that look fantastic!?!?!  You need to make this!! 🙂

And not just this chick, my son gave it a big thumbs up too. Whew!  This is one of those last minute desperation meals I came up with when my son said…”Hey Mom! Whatcha got to eat?” and of course his dad and I had just finished polishing off the leftovers….oops. Uhhhh…”just a minute, honey!” and I started rummaging around in the fridge and freezer. Luckily for me he’s a big fan of chicken and I happened to have this package of Grilled & Ready Tyson Chicken Breast Fillets in the freezer. Yay!

Ok…chicken, check. What else? Think Bex!

Weeellll, he’ll ALWAYS eat bacon…(as will everyone else in the family, HA!)

So I gathered up a few more things and fired up the time-saving device of our generation!

Ingredients

  • Boneless Chicken Breast (pre-cooked, leftover or frozen)
  • Sandwich Roll
  • Butter or Margarine
  • Garlic Powder
  • 2 Slices Bacon
  • 1 Slice Provolone Cheese
  • Green Leaf Lettuce
  • Sliced Tomato
  • Ranch Dressing

Directions

Nuke up a couple slices of our family’s favorite food and follow the package instructions for the chicken.

Look how nice and juicy that chicken is! Not bad for a frozen product, huh?

  

Let the sandwich making begin!

Butter your sandwich roll and sprinkle on a little garlic powder. Toast on griddle until golden brown.

    

Add a slice of cheese.

Add warmed chicken breast.

Add Bacon, tomato slices, and lettuce.

Then add ranch dressing to the top bun.

Flip that lid…

This Chick Likes Bacon & Ranch (Sandwiches)

‘cuz they are FAST and EASY, and keep mom from feeling too guilty about scarfing up the leftovers!

It’s Malibu at dawn… Leo Carillo State Beach.  The sun isn’t quite awake yet and all the campers are still snug in their sleeping bags.  I love the beach at this time of morning… the sky is just beginning to get light and you can feel the sea mist on your sleepy face.  As I walk along the rocky shore… I might spy a lone surfer or two hoping to catch that perfect wave before he has to paddle in and trade the wetsuit for a business suit.  My sister and I like to take these walks together, looking in the tide pools, hoping to find that perfect shell.  It’s fun to see the starfish, clams, crabs, sea anemone, etc.  We walk and we talk, it’s fun to catch up after not spending quality time with each other.  Then it’s time to head back to camp to start coffee and make breakfast for our brood of campers.  It’s a short walk under the bridge into the campgrounds and it’s just like we’re in the woods.  If you didn’t hear the waves crashing on the rocks you’d never know the beach was there.

After breakfast is finished, dishes done and teeth brushed, it’s time to pack up the kids and get ready for a day at the beach.  I’m not going to bore you with words… pictures speak louder than words, right??  I will share some shots of ‘our’ beach and then some shots of our kids, grandkids, nieces, nephews… It’s a family affair!  I hope you enjoy – we had a great time!
